Hi Curt. We are taking a similar approach. We will de-solder the microphones with a hot air station and tap into the signals with small wire. It is doable, with the right equipment. I don't suggest you attempt this if you don't have hot air ability.
PS. Those are some nice pictures.

Re: Ground loop buzz
Hi Mike. I'm sorry it hasn't worked out. From your description it sounds like you don't have it connected right. The reduced line should be connected to the two furthest pin from the insertion point, and the speaker ground connected to the single pin on the other side. See picture: plug2.png I have ...

Re: Ground loop buzz
Hi Mike. You shouldn't be getting a buzz.
The negative speaker terminal should be connected to the negative pin on the 3.5mm plug. When you plug in the aux cable any hum should disappear.
If you post a picture of your home mini mod kit wiring I can verify that it's connected properly.

Re: Not getting stereo out
Hi Mike. The home mini only outputs mono, but the wiring instructions show how to split the signal so it becomes "stereo". How did you wire the plug? If you post a picture of the wiring I can help more. For reference the instructions are here: https://docs.google.com/document/d/1iInNkbP40B...

Project: Add external microphone to Home Mini
A member has commissioned us to look into adding a microphone jack to the Home Mini so we will be using this thread as a project log. I will also be making a video of the progress. Stay tuned! *Update* - We succeeded and the mod kit is now on sale here. https://www.snektek.com/shop/index.php?route=p...

Hi Mark thanks for your message.
For the wifi on/off switch, maybe try a wemos with relay attachment.
For the dimmer/volume control, I'm not sure how its connected, do you have more info on that?
